Ingredients

Gluten Free Banana Pancakes

3 small eggs, lightly whisked

2 small ripe bananas

Coconut oil

Method

  1. Mash the bananas with a fork.
  2. Add the whisked eggs and mix well until smooth.
  3. Heat a frying pan over a medium heat and add a teaspoon of coconut oil.
  4. Once the oil is warm, not hot, pour some batter pancake sized dollops into the pan and fry on both sides until golden brown.
  5. Serve with toppings such as maple syrup, blue berries, walnuts, sliced bananas, strawberries, yogurt, nuts and seeds etc.
