Mandarin & Coconut Chia Pudding

Ingredients:
Chia Pudding:

½ cup black & white chia seeds
½ cup coconut yoghurt or Greek natural yoghurt
1 cup coconut milk
1 cup almond milk
1/2 vanilla bean, seeds scraped
1 tablespoon of honey, plus extra for serving
Coconut Caramel Mandarins:

150 gm coconut palm sugar, crushed
125ml water
1 tbsp lime juice
3 Gold Nugget® mandarins, segmented
1/2 vanilla bean seeds scraped

Method:
Place yoghurt, coconut milk, almond milk, vanilla bean seeds, honey, in a bowl. Stir to combine. Pour in chia seeds, in a steady stream while whisking to avoid clumping.
For coconut-sugar caramel, stir sugar and 125ml water in a saucepan over medium heat until sugar dissolves, bring to the boil, then cook until syrupy (4-6 minutes). Add lime juice and set aside to cool, then refrigerate until chilled (20-30 minutes). Gently stir in the Gold Nugget® mandarin segments & vanilla bean.
Serve chia with coconut caramel mandarins and extra dollops of yoghurt if desired.
