CREAMY SWEET POTATO SALAD WITH FETA AND BEETROOT
INGREDIENTS
1kg Sweet Potatoes, washed & cubed
1 Cup organic Mayonnaise
2 Whole beetroots
3 Tablespoons Dijon Mustard
1 Pack Feta, crumbled
½ Red Onion, diced
¼ Cup shallots or Garlic Chives
¼ Cup Pine Nuts
Salt & Pepper to taste
INSTRUCTIONS
Boil potatoes for about 20 minutes until soft, but not ready to crumble. Drain and place in large bowl. Bake whole beetroots for about 20 minutes, when cool, cut into small wedges (similar size as potatoes). Add mayonnaise, beetroot, mustard, feta, red onions and shallots (or chives). Gently toss. Serve warm or cold.
