Gluten Free Banana Pancakes
3 small eggs, lightly whisked
2 small ripe bananas
Coconut oil
Method
- Mash the bananas with a fork.
- Add the whisked eggs and mix well until smooth.
- Heat a frying pan over a medium heat and add a teaspoon of coconut oil.
- Once the oil is warm, not hot, pour some batter pancake sized dollops into the pan and fry on both sides until golden brown.
- Serve with toppings such as maple syrup, blue berries, walnuts, sliced bananas, strawberries, yogurt, nuts and seeds etc.
